I've made a cheesecake. I plan to decorate it with halved strawberries around the edge and sliced strawberries into the center. I need a clear glaze that I can pour over my fruit to give it a nice shine.

apricot jam, heated. Yes, it gives it a slight "orange" color, but it's not bad.

Vanilla Glaze

INGREDIENTS

* 1 1/2 cups confectioners' sugar
* 2 1/2 teaspoons milk
* 1/8 teaspoon salt
* 1/4 teaspoon vanilla extract
* 1 teaspoon butter

DIRECTIONS

1. Melt the butter and add to rest of ingredients. Mix until creamy.


Six Flavor Glaze

INGREDIENTS

* 1/2 cup white sugar
* 1/4 cup water
* 1/2 teaspoon coconut extract
* 1/2 teaspoon rum flavored extract
* 1/2 teaspoon butter flavored extract
* 1/2 teaspoon lemon extract
* 1/2 teaspoon vanilla extract
* 1/2 teaspoon almond extract

DIRECTIONS

1. Combine sugar, water, extracts, and flavorings in a saucepan. Bring to a boil, stirring until sugar is dissolved. Spoon hot glaze over cake.

Almond Glaze

1. Combine 1/4 cup milk, 3/4 cup sugar, 1/2 teaspoon almond extract and toasted sliced almonds (optional)

That concoction is never going to be clear. Delicious! But not clear. Take 1/3 cup of jelly (apple, currant, peach) and melt in a sauce pan on low till it is in a liquid form. Brush lightly on your berries. Place back into the fridge and it will remain on the fruit and not run off. Good luck!
