Turkey Enchiladas are absolutely wonderful, and you don't feel like you're eating leftovers, again. Just buy tortillas, enchilada sauce, shredded Monterrey jack, shredded Cheddar, and cream cheese, onion (or any other things you want, like jalapenos, olives, etc.). Tear turkey, epically dark meat, into little bits. Spread sauce over tortillas, add ingredients, roll up, and bake at 350 until warmed through. You may even sprinkle more cheese on top! Yummy!!!

Well, we always made fresh stuffing and added strips of turkey to it and baked in the oven with a layer of cheese on top and gravy on the side. I can't think of anything but the generic leftover recipes. Once the turkey has been baked and basted in it's own juices, it's honestly not going to change in taste and only dry out with each new cooking. I guess Turkey Pot Pie was invented for just that reason.

mhmmm your turkey salad sounds yummy!!! I always make turkey soup for boxing day dinner. we also always have clubhouse sandwiches too. that always gets rid of lots of leftovers. I dont know what it is, we could eat turkey forever in my house! Also, sometimes like to make turkey a la king with my leftover turkey soup the following day by adding soem cornstarch to it and serving over rice or noodles! See we always find soemthin in my house!

I make turkey salad, turkey soup, and turkey casserole. Of course, have to freeze some turkey.

"Easy Turkey Pot Pie" - 8 servings
2 (15 oz.) cans Veg-All Original Mixed Vegetables; drained
1 (10 3/4 oz.) cream of potato soup
1/4 cup milk
1 lb. (2 cups) cooked turkey; shredded
1/4 tsp. thyme
1/4 tsp. pepper
2 (9") frozen ready-to-bake pie crusts
Preheat oven to 375*. In medium mixing bowl, combine first 6 ingredients; mix well.
Fit one pie crust into 9" pie pan; pour vegetable mixture into pie crust. Top with remaining crust, crimp edges to seal, and slit top with knife. Bake 50-60 minutes (on lower rack) or until crust is golden brown and filling is hot. Allow pie to cool slightly before cutting into wedges to serve.

turkey sandwiches with gravy... good times!
and a friend of mine takes all the turkey leftovers and smokes it, some of it is smoked and dried to a jerky type thing, and he flavors it with different spices and stuff, its really good.
my grandmother will take her leftover turkey and make a stew, thats always great as well... nothing like gramma's cooking!

Make an omelet with it (cut it up in small pieces and fry it up with your eggs). make turkey sandwiches with cheese, make grilled cheese with turkey.
