What is an s-blade used for on a food processor?

Cutting and grinding. The smaller plastic s blade is for dough. The metal one can grind bread into crumbs, make salsa or hummus, puree food, anything practically.

It's kind of shaped like an S. You put it in the center, over the agitator part and the insides of each side (which make the S) do the cutting. It should be included with your processor.
