I have to let them cool but can I leave them out all night or should I put them in the refridgerator? I put a sour cream glaze on top as well and that's cooked too but I'm still unsure. I've always had cheesecake cold anyways....I should have just bought the instant...

Hi, Cool outside of refrigerator until it is cool enough for you to handle the pie plate. Then put in refrigerator until ready to eat. It sounds like you did just fine. I too make the recipe that has the sour cream topping. I think people think they are much harder to make than they are and that scares a lot of people from making them.

You are going to want to put it in the fridge if possible, once a food item reaches room temperature its chance of become a bacteria colony is good. Unless you choose to do what my Grandma does and out it out on the porch. T-Day in Connecticut is very cold, so the pies go out to the enclosed (but uninsulated) porch. As long as it stays cold, you're good. It also makes it easier to cut and serve.

I would leave them in the frig if you have room. or a tupperware covered container. sounds so good!!!!!!!
