You will need a meat thermometer for a truly accurate response. According to Alton Brown of the FOOD network, you can cook a turkey anywhere between 350 and 400 degrees, there's no Holy Grail of oven temps. That being said, it is a good idea to stay between 350 and 375, especially for such a large bird. This way the inside cooks evenly without the outside burning to a crisp. You want to cook your bird until your meat thermometer reads 170 degrees in the leg and about 180 in the breast. For a crispier skin you can jack the heat up to 400 for the last half hour. You will also need to baste your turkey every 30 minutes AFTER the first hour in the oven. So after an hour, baste, wait 30 min, baste again, etc. The bird will take about 4 hours so to eat at 5pm it needs to me thawed, rinsed, dried, seasoned, dressed, and in the oven by 12:30pm, and taken out at 4:30pm to rest for a half hour before carving.

325 degrees, and figure on 5 hours cooking time....15 minutes per pound for a 20 pound stuffed turkey. Let the bird sit for about 20 minutes after you remove it from the oven.
