I need the zest of an orange for a receipe.

The very outside of the orange peel you can finely grate the peel to get the zest. There is a special tool that can do it for you but I'm guessing you don't have one and don't have time to go get one. Try a cheese grater with the smallest holes and grate just a small amount.

The best way to get the zest of an orange is to take a small handheld cheese grater and grate the outside of an orange. Only the outside dark orange is the zest. You only get a tablespoon or so off one orange.

It is the rind. Just the orange part. The pith (the white under the orange part) doesnt count as zest.

To get the zest of a citrus fruit, you simply scrape very thin pieces of the peel. Try hard not to get any of the white under the peel - that is bitter.
