Pumpking pie is *ACTUALLY* a kind of custard pie, so it is done when a knife put in halfway between the edge and the center comes out clean, but the center may still giggle.

Actually, the middle of the pie for an inch or two should be a bit jiggly. It will firm up when taken out of the oven as it continues cooking for a few minutes.

i take a butter knife stick it in the middle of the pie , if it comes out clean the pie is done.
