Simple Cheesecake
Adapted from a recipie I found in Sunset magazine around 1970. Back in those bad old days there were no frozen cheesecakes and recipies for cheesecake were few and far between. My mother loved cheesecakes and was thrilled when I found a recipie. This makes a firm, dense product. Preperation time doesn't include cooling.

8 ounces cream cheese
1/4 cup granulated sugar
1/2 cup sour cream
2 eggs
1 prepared graham cracker pie crust

Mix cream cheese, sugar, sour cream amd eggs.
Pour imto pie shell.
Bake at 350 degrees for 25 minutes or till a 3 inch circke in center jiggles.
Cool 3 hours or overnight.
Serve with desired topping. Lemon Jello is especially pretty.

5-8 oz packages softened cream cheese
1 1/2 cups sugar
6 eggs at room temperature
1 1/2 tsp. vanilla

Beat the cream cheese and sugar, add the eggs one at a time. Add the vanilla. Pour into a springform pan, with either a graham cracker crust on the bottom, or mixed package of brownies. (if you are using brownies, bake it first and then add the cream cheese mixture). Bake at 325 oven for 35 minutes, and then turn the oven down to 250 and bake for another 35 minutes. Cool with oven off and door open for an hour. Refrigerate.

**To keep the cheesecake from cracking while baking, put a pan of water on the rack below the cheesecake.

This is the best cheesecake recipe I have ever come across, and I even went into a cheesecake business using this recipe. Good luck.

You need two pound of cream cheese, six eggs, two teaspoons of baking powder, six tablespoons of sugar, one teaspoon of vanila and half a cup of butter. Keep the cream cheese of the refrigerator for one day, then put it in a mixer with baking powder, sugar, vanila and melted butter. Afterward separate the eggs and put the yolks into the mix. Mix everything together. Whip the eggwhites until they are fluffy. Put it carefully under the cream cheese mix. Place everything in a baking pan. Preheat the oven to 350 degrees. Bake it for an hour or until the top is golden yellow. Hope that helps.

heres a super easy way for the fridge type.


3 pks of regular cream cheese. i think 8oz.
1 small can sweetend condensed milk
2 gram cracker crust.
half a lemon squeezed or 1 cap of lemon juice.


mix cream cheese until creamy, slowly add condensed milk, add in lemon juice put evenly into gram cracker crust.
