If the turkey browns too much after the 500 degree blast, use foil to cover.

At very low temperatures, the turkey may never get hot enough inside to kill bacteria. If you're going to try it, use a meat thermometer to know the meat's getting to 165 degrees way down inside the breast. A cooked turkey sitting out most of the day is a playground for bacteria. Why not just put it in at 11AM and cook according to package directions?

The last few years, I have been cooking my turkey the day before and that leave me Christmas day for all the other things to cook..just put it in the oven for about 1.5 hrs and keep basting.. you will never know it was cooked the day before

I cook my turkey at 250 degrees starting from early morning. It is generally ready about 3:30 or 4pm. So, after I let it sit for 15 minutes, it is soft, juicy and well-cooked.

Good chance of it. I don't recommend cooking it all night, nor should you have to. You can get up a bit earlier and get it in the oven early. Also, after serving, you really should take care of the leftovers within the half hour after dinner, and put them, well- wrapped, into the fridge.
