Once the eggs are cooked, put the pan under cold running water. Take each egg, and tap it on the sink til the shell is all cracked. Put back in the pan to allow the water to get between the shell and the egg. You have to break the membrane on the inside of the shell when tapping, to let the water get in.
Peel under running water.
Should be no problem...

As for the peeling of the egg, the fresher the egg, the easier the shell comes off. As soon as the eggs are finished boiling, pour off the water and fill the pan with cold water. I usually crack the egg on all sides and try to get the membrane off with the shell. The shell usually just peels right off.
Deviled eggs:
egg yolks
miracle whip
mustard
sweet pickle relish
(just do it with a feeling, I never measure)
After I have put the mixture back in the egg halve, I sprinkle a little bit of paprika on top for color. Yummy. I can't wait until tomorrow. Happy Thanksgiving everyone.

if you add a little bit of salt to the water before you boil it they will not break while boiling and if you cool them in cold water as soon as they come off the stove from boiling (let them be ran under cold water for a few minutes or else they will still be hot inside) then carefully crack the eggshells on the side of the pan and crack the rest of the eggshell softly and then just peel it off...it should come off nice and easily.
if you like sweet deviled eggs try this recipe:
boil eggs, cool, peel, cut horizontally.
put egg yolks in seperate bowl. smash with fork until chunky.
add:
2 tablespoons of miracle whip
1 1/2 tablespoons of mustard
1 tablespoon of sugar
mix until blended. return to eggs with fork.
mmm....so good

After the eggs are done, drain the boiling water off, and break the eggshells pretty good. Cover with cold water and let set for about 5 minutes and the shell usually just comes right off.

After boiling 8 - 10 minutes, drain into a bowl of ice. Roll eggs to chill all sides & peel after about 5 minutes. Slice lengthwise & scoop out yolks. Mash yolks into bowl with mustard, dab mayo, horseradish & salt and pepper. Spoon into egg halves & garnish with olive slices or paprika ( pickle relish is optional in the yolk mixture - whatever your preference...)

Easy Deviled Eggs & Ham:
Prep Time: 10 min
Total Time: 10 min
Makes: 6 servings
3 hard-cooked eggs, cooled, peeled
3 slices OSCAR MAYER Shaved Smoked Ham, finely chopped
1 CLAUSSEN Kosher Dill Mini Pickle, finely chopped
1 Tbsp. MIRACLE WHIP Light Dressing
1 tsp. GREY POUPON Dijon Mustard
Pepper, to taste
CUT eggs in half lengthwise. Remove yolks; place in bowl and mash with fork.
ADD ham, pickles, dressing, mustard and pepper; mix well.
SPOON egg yolk mixture evenly into egg whites. Serve immediately or cover and refrigerate until ready to serve. Garnish with paprika, if desired.
