I want to make two new sweet potato dishes for tomorrow, would yall tell me your personal favorite sweet potato dish (no pies, that's covered) or way of preparing sweet potatos? The one's I have are large...roughly a pound each. My favorite was a mashed mix with whole cranberries, brown sugar, dash of lemon and lime juice with some marshmellows and crushed walnuts. I'm looking for something new and different. That's why I am asking for yall's favs. I realize that there are thousands of recipes on the web, I am looking for REAL tried and true recipe's that people love.

Smoked Chile Scalloped Sweet Potatoes Recipe courtesy

2 cups heavy cream
1 heaping tablespoon chipotle pepper puree
3 medium sweet potatoes, peeled and thinly sliced 1/8-inch thick
Salt and freshly ground black pepper


Preheat oven to 375 degrees F.
Whisk together cream and chipotle puree until smooth.

In a 9 by 9-inch casserole dish, arrange the potatoes in even layers. Drizzle with 3 tablespoons of the cream mixture and season with salt and pepper. Repeat with the remaining potatoes, cream, and salt and pepper to form 10 layers.

Cover and bake for 30 minutes, remove cover and continue baking for 45 minutes to 1 hour, or until the cream has been absorbed and the potatoes are cooked through and the top is browned.


Smashed Sweet Potatoes

4 pounds sweet potatoes (about 6 large)
1/2 cup orange juice
1/2 cup heavy cream
4 tablespoons (1/2 stick) unsalted butter, melted
1/4 cup light brown sugar
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Preheat the oven to 375 degrees F.
Scrub the potatoes, prick them several times with a knife or fork, and bake them for 1 hour or until very soft when pierced with a knife. Remove from the oven and scoop out the insides as soon as they are cool enough to handle. Place the sweet potato meat into the bowl of an electric mixer fitted with a paddle attachment and add the orange juice, cream, butter, brown sugar, nutmeg, cinnamon, salt, and pepper. Mix together until combined but not smooth and transfer to a baking dish.

Bake the potatoes for 20 to 30 minutes, until heated through.

Raspberry Sweet Potatoes
Ingredients
8 medium-size sweet potatoes
1 teaspoon salt
1/4 cup firmly packed brown sugar
1/4 cup butter or margarine, softened
1 (10-ounce) package frozen raspberries, thawed and undrained


Instructions
Cook sweet potatoes in boiling salted water 20 to 25 minutes or until tender. Drain and let cool to touch. Peel and cut in half lengthwise. Arrange sweet potatoes in a lightly greased 13- x 9- x 2-inch casserole, cut side up. Combine brown sugar and butter in a small bowl, mixing well. Spread brown sugar mixture over cut surface of sweet potatoes. Top with raspberries and juice. Bake uncovered, at 350 degrees F. for 25 minutes, spooning raspberries and juice over potatoes occasionally.

Yield: 8 to 10 servings.

Tipsy Sweet Potatoes
Ingredients
2-1/2 cups cooked, mashed sweet potatoes
4 tablespoons butter, softened
1/2 cup firmly packed light brown sugar
Pinch of salt
1/3 cup Jack Daniel's Whiskey
Pecan halves or marshmallow for topping


Instructions
Preheat oven to 325 degrees F. Combine all ingredients except topping. Spoon into a greased 1-quart casserole. Top with pecan halves or marshmallows. Bake for 20 to 25 minutes until bubbly.

Yield: 6 to 8 servings

I personally like these because when I found them on the internet I tried them for a family get together and everyone loved them. They are a bit different from your everyday sweet potato dish. Hope you find these as good as we did. Happy Thanskgiving!

Try a sweet potato soup .

Saute 1 onion, finely chopped, with 3 diced carrots, a couple of stalks of celery until the onions start to caramelize.
Add 1 minced clove of garlic, 4-5 cups of chicken stock, and a pound to a pound and a half of sweet potato.
Bring to a slow boil and cook until the potatoes are cooked.
Remove from heat and puree.
Add a little water if you want a thinner soup.
Serve with a dollop of sour cream if desired.

I make a pot almost every week during the fall and winter. It's a nice hearty, thick soup and with the carrots its a little sweet.

This is a good one!

Sweet potatoes, Drain a large can of sweet potatoes (or use cooked fresh ones) - put in baking dish. Add a small can of (drained) pineapple either crushed or pieces and a small can (drained) of mandarin oranges. Sprinkle with a thin layer of brown sugar, dot with butter. Arrange a layer of marshmallows on top. Bake (uncovered) until heated through and marshmallows are browned

I love to peel them, slice them so theyre smaller, boil the heck out of them....when they get soft enough to mash but not falling apart soft so that theyre mushy.
Then I mash them....leaves some chunks, different texture is good in this case. Add some milk, lots of butter (margarine) pinch of salt and about 1/4 cup of sugar, brown or granulated-whichever you prefer. Serve.

For children I have like a little mountain and I put a marshmallow in the centre as the nose and m&ms for eyes! LOL

Either way you make sweet potatoes it'll be yummy, any sweet potatoe lovers like myself love them any way theyre made pretty much.

This recipe I have baked for my family for years and is loved. Not real sweet and candiedbut delicious.It is called Cranberry Yams.
2 28 oz. cans yams (drained)
1 10oz can apricots
1 cup fresh cranberries
3 Tablespoons light brown sugar
2 Tablespoons cornstarch
1/2 teaspoon cinnamon
1/2 cup golden raisins
1/2 teaspoon grated orange rind
preheat oven to 350 degrees
Arrange yams in 6x10 inch baking dish. Drain apricots, reserve syrup. Arrange apricots between sweet potatoes. Add cranberries
Add enough water to reserved syrup to measure 1 cup. Combine brown sugar, corn syrup and cinnamon in saucepan. Stir in syrup and raisins. Bring to a boil over high heat. Add orange rind; mix well. Pour over sweet potatoes. Bake for 20 minutes or until heated through.
YIELD: 10 to 12 servings

I always make them one way and everyone eats the dish clean.

Bake them, peel them, mash them with a little milk, butter, and salt, pepper, galic powder, chives. Make it up like mash potatoes then spread in a rectangle baking dish.
Sprinkle the top with grated chesse (3 types) cheddar, monterey jack, and little swiss. Cover the top. Sprinkle the top with fresh parsley grated. Put toothpicks in it and add foil (the picks keep the foil from touching the cheese.
Bake at 350 degrees for one hour. Let it cool 5 mins and serve.

Leftovers are good too and can be reheated in microwave. These potatoes are light and fluffy and gooey. Jus love em.

sweet potato casserole

1 large can sweet potatoes, drained
2 eggs
1/4 cup brown sugar
1/4 cup white sugar
1 teaspoon vanilla
3 tablespoons flour
mix all together until smooth, bake in a 350 degree oven for 30 minutes or until set. topping....1 cup brown sugar, 1/2 stick butter and 1 cup chopped pecans. sprinkle on top of sweet potato mixture the last 10 minutes of baking. you can also add marshmallows.

I like the savory aspect of sweet potato - I put gravy on mine much to everyones horror around here.

4 medium sweet potatoes, peeled and cut into 1 1/2-inch-thick rounds
3 tablespoons olive oil
4 large garlic cloves, minced
1/3 cup fresh thyme leaves, plus 6 thyme sprigs for garnish
1/2 teaspoon kosher salt
1/2 teaspoon red pepper flakes

Preheat oven to 450°F. In large mixing bowl, combine all ingredients and toss. Arrange potato slices in single layer on heavyweight rimmed baking sheet or in 13x9-inch baking dish. Place on top rack of oven and roast until tender and slightly browned, about 40 minutes. Serve warm or at room temperature, garnished with thyme sprigs.

SWEET POTATO CASSOROL!!!
i'm not sure about the amounts, but just have fun w/ it!

~sweet potatoes
~brown sugar
~butter
~vinila
~marshmellows

peel the potatoes ans smoosh (lol) in the butter (better melted) and put as much brown sugar as you like, all in a cassarol dish. oh, and add the vinialla. then put marshmellows (as many as you want) on the top and pop it in the oven. keep it in there until the marshmellows are brown on top or it's hot in the center.
and there ya go!
