it seems like every few days, as soon as i get online, there's another windows update downloading...it wouldn't be so bad, but i have a really cruddy dial-up connection out here in the boonies and everything else comes to a near-halt while the stuff is downloading...then, if i'm away from the computer for more than a few seconds once the download is complete, my computer gets shut down for a re-start...i'm glad for the updates, but enough already...

Yeah that can be a pain. Go to your control panel, click on the system icon. When the system properties window opens click on the automatic updates icon. Change the setting to "Notify me....."
and your computer will no longer automatically download and install the updates but instead tell you that new updates are available. That way you can get to your work, browsing etc and when your done with your stuff you can activate the download when you go get a beer, coffee, or whatever.

I have also noticed that lately there have been an inordinate amount of updates coming from Microsoft. It used to be just the second Tuesday of every month now seems like every three days were getting a massive amount of updates. If you're on a dial-up connection what you can do is set your computer to receive updates in the evening when you're not using the computer that way it will not interfere with your Internet time. Good luck!

Check to see if your updates are completing. Next time try to be there before the reboot or write down the updates that you are getting. If an update fails it will not register and windows will try to download it again.

Go to Tools, Windows Update and change Automatic Updates to Off. Then you can download them when you feel like it. And yeah, it's a pain to have it restart when you want to do something else.

By default, windows is configured to have the automatic updates enabled. However, you can disable it.
open gpedit.msc
go to Software configuration
go to Start Menu and taskbar options
enable the entry that says, Remove access and links to windows update
Windows updates is now disabled and will not run until you disable this option
