Shaker Fresh Cranberry Bean Chowder The recipe calls from dried beans and fresh tomatoes, but I used canned beans and tomatoes that I had in my pantry. This is the recipe with a few variations and notes on how I adjusted the recipe for my needs. Ingredients: 2 lbs fresh cranberry beans (or about 4 cans of white beans) 4 ounce slab bacon, cut into 1/3 in. dice 1 clove garlic, finely chopped 1 large onion, cut into 1/2 inch dice 2 -3 sprigs of fresh thyme 1 dried bay leaf 5 cups Chicken Stock ( I used two large boxes of Free Range Chicken broth) 1 lb ripe tomatoes peeled and cut into small pieces ( I used a 1lb. can of diced tomatoes with their juice) 2 tablespoons dark molasses Sea salt and freshly ground black pepper 3 scallions, thinly sliced for garnish. Directions. Prepare the beans or as I did open the cans. Heat a 3 to 4 quart heavy pot over low heat and add the diced bacon. Once it has rendered a few tablespoons of fat, increase th heat to medium and cook until the bacon is crisp and golden brown. Add the garlic and cook for 30 seconds. Add the onion, thyme, and bay leaf and saute, stirring occasionally for about 8 minutes, until the onion is tender but not browned. Add the beans and stock. Partially cover the pot and bring to a simmer. Heat over medium heat for 20 to 25 minutes (if dried beans are used until the beans are tender). Reduce th heat to low. Remove 2 cups of the chowder and puree in a processer then return it to the chowder. Add the tomatoes and their juices along with the molasses, and let the chowder simmer slowly for another 15 minutes. Ladle the chowder into bowls and garnish with sliced scallions. I served the soup with a mixed green salad that had fresh pear cubes, grapes and apple cubes in it , and biscuits. I used commerical frozen biscuits from the freezer and they were great with this soup. Sometimes good doesn't have to mean difficult or complex!

Let me say that there sure are a bunch of rude people on Yahoo Answers tonight! Try not to take it personally. We have all been beginning cooks at one time or another. Such jerks!! Yes, they are called whole cranberries when they are in the hard "seed" like form, and if you boil them long enough they actually "burst" open to create cranberry sauce. They are quite bitter, though, so you'll need to add lots of sugar to make them sweet and edible. Good luck!

Treat them the same way you would any other berry...
And make a "jam" with them...cook over a slow fire 50% each of cranberries and sugar...until the berries burst, and the sugar thickens, and voilà...you have cranberry sauce... You can add a little orange juice to taste, Or if you strain it you can make a jellied cranberry sauce....

Dump the bag into a meedium sized pot.
Add 1 cup sugar.
Add 1 cup orange juice.
Bring to a boil and then reduce to a simmer for about 30 minutes or until it thickens.
Right before you serve it, grate some orange zest into it - it really brightens the flavors!

Well first of all dumb ***, cranberries are berries. they are not beans. To cook them you boil them in water with some sugar. they will pop open and meld into a relish kind of thing. you could add some orange peels for flavor. or serve them with some nuts, preferrably walnuts.
