"Le laissez-cours" means to let the things go the way there meant (supposed) to be, another french expression for it, that we hear more often is "Qué sera, sera"

You see I am French and I didn't know what this sentence meant nor did I ever heard it.
It is the moment when you are hunting with dogs you let them chase the prey.
Courre comes from the verb courir which means to run.
I think with this you should be able to get the meaning. Sorry I don't know how to translate it in English
