you can make the dressing the night before I always do. DO not stuff the bird at this time. Load it in to your bread bags and just befor you put the bird in take the stuffing out of bags and stuff the bird. IF YOU stuff the bird the night before the bird can leak on to the stuffing and cause food poisoning. Keep the bags of dressing in the refrigerator

I have done so for years. I use half to stuff with and half I serve out of the bird. I make my stuffing the night before and reheat it slightly to remove the chill from the fridge. I wouldn't let it sit out at room temperature though, nor would I stuff the bird with refridgerator cold stuffing.
A lot of people will tell you not to do this, that you must stuff the bird immediately with the dressing mixture and then bake the bird immediately. I also did that for years. There is no difference in taste and I've never become ill from food poisoning. So, I didn't have a problem with mush, but then I reheat in the oven and in the bird basically cooking it a second time, but it is always gobbled up. Oh, and I cook for 25 family members, and none of them have ever gotten sick either and they all love my dressing. So I would say it is safe to make the dressing the night before. Hope this helped.

Dressing--stuffing--same thing, it's just that we call it diffferent things on opposite sides of the Mason-Dixon line. I live in Seattle so I say stuffing. If you do make it ahead of time, then yes, it will get mushy. But what you can do is have all the prep work done a long way ahead--so chop your onions, chop your celery, any herbs that you are using--and put them all in a big plastic bag, then saute what needs to be sauteed and assemble the stuffing tomorrow. Having all the washing, drying and chopping done in advance is a huge time-saver when it comes time to put it in the oven tomorrow. Happy Thanksgiving and enjoy your stuffing OR dressing!

Yes, I have done this many times and I know it works just as good as making it then as long as if you use butter or soup that you wait to add that until you are ready to stuff it. If you are making fresh green beans or mashed potatoes from scratch you can also get them ready the day before. Wash and break the green beans put them the water you are going to use to cook them and keep them in a container in the refrigerator. With the mashed potatoes you peel and cut them and then add them to their cooking water be sure that there is enough to cover them and put them into a container in the refrigerator. Then the next day when you are ready to start them just put them into the pan and cook them the same as usual, this saves lots of time on Thanksgiving day.

Yes, no problem. The stuffing will get cooked in the oven. Just stuff it in the turkey and put in the oven right away. We usually prep it the night before for any easier time the next day.
