No-Bake Cookies 'n Cream Cheesecake

Makes: 8 servings
9 OREO Chocolate Sandwich Cookies, divided
1 tub (8 oz.) COOL WHIP LITE Whipped Topping, thawed, divided
1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, 1/3 Less Fat than Cream Cheese, softened
1/2 cup sugar
1 cup vanilla low-fat yogurt
1 OREO Pie Crust (6 oz.)
HALVE 4 of the cookies; reserve for garnish. Finely chop remaining cookies; set aside. Remove 1 cup of the whipped topping; store in tightly covered container in refrigerator to use as a garnish.
BEAT Neufchatel cheese and sugar in large bowl with electric mixer on medium speed until well blended. Add yogurt; mix well. Gently stir in the remaining whipped topping and the chopped cookies. Spoon into crust.
REFRIGERATE 3 hours or until firm. Top with the reserved whipped topping and cookie halves just before serving. Store leftover pie in refrigerator.

You can make (or purchase) a fruit or a fruit and cheese platter. I do this for Thanksgiving to give people something to snack on before the main course and there is some for dessert for those who don't want the heavy desserts. Just cut up whatever fruits that are available (fresh pineapple is delicious and always amongst the first to go) and in season. If you use cheese, then I would select a medium cheddar and a pepper jack. You can buy a serving platter from just about anywhere. One which is festive would look nice. Separate the sections with curly parsley or kale. Search the internet for pictures of fruit/cheese platters to help guide you on how it can be arranged to look professionally done.

Fruit Salad
The quantity and variety of fruit is up to you. If you want leftovers, cut up a little more. Use equal parts lime juice and sugar for the dressing, enough to coat your fruit.
1/4 cup freshly squeezed lime juice
1/4 cup sugar
1/2 pineapple, peeled, cored, and cut into 1-inch pieces
1 mango, peeled, pitted, and cut into 1-inch pieces
2 kiwis, peeled and sliced
1/2 pound grapes, picked off stems
1/2 small melon, peeled, seeded, and cut into 1-inch pieces
1 pint any seasonal berries
In a small bowl, whisk together the lime juice and the sugar. Place cut up fruit in a large salad bowl, pour sugar lime mixture over fruit. Taste and adjust seasonings with more lime or sugar as needed.

I don't know why, but baking seemed easier to me... and maybe funner 'cause I'm just fourteen. You should make pumpkin cookies. I don't know how, but i'm sure that if you look it up, you'll find it. It's a cool way to put some Thanksgiving flavors in a miniature package. Plus, who wouldn't take a cookie?

simple and go with any dinner.
thin sliced dry beef
cream cheese
dill pickle spears (thin slices)
spead cream cheese on beef slice and put pickle slice in and roll up, chill for an hour
kids luv'm
can do the same using ham and green onions with cream cheese

ok this stuff is SO good. my old daycare lady used to make it:
2 sm. pkg. jello
2 sm. pkg. tapioca
2 sm. pkg. vanilla pudding
(cook and serve)
12 oz. pkg. cool whip
boil pudding and jello with 6 cups of water-cool then add the cool whip and fruit if you want.
EASY and DELICIOUS!!! :)
