I just sprinkle it all over and rub it in. I'd guess a few tablespoons. People will disagree, but I don't think the external flavoring really changes the turkey much unless it's marinated. Personally, I prefer a handful of fresh herbs and some garlic and onions inside the bird for flavor.

Well I like to use sage, tyme and onion powder it tastes so good that way.

What you do is rinse the turkey and if you are going to stuff it do that.

Put it into the roasting pan with a wire rack under it so that you will get the drippings for gravey and your stuffing stays dry.

Then I like to pour either one large can (or two of the regular size cans) of the broth from a can of Campbells chicken rice soup over the top of the turkey and into the bottom of the pan (this will help so that you have plenty of gravey and it tastes so good too)

Next baste it with cooking oil.

Then get your spices and sprinkle the sage on until you have a light dusting on the tukey.

Next the tyme the same amount and then the onion powder just a little more about another couple of shakes.

When you are done the top of the turkey should have enough spice on it that it is covered almost completely but the exact amount doesn't actually matter just so long as it is close.

When you are done cooking the turkey you remove it from the pan and I like to strain the drippings first with a strainer then I make it into gravey by just adding wondra and salt to taste.

The very best thing you can do is get a Reynolds Oven Bag (turkey size). You can't miss and the recipe and instructions are on the back! It takes 1/2 the normal time to cook also.
Good Luck~
