Yes, that's totally fine! It really helps with the prep time. Just toss them in a big bowl of cold water and put them in the fridge. They'll be fine.

Oh yea. Not a prob! Peel em, cut em up and keep in cold water in your fridge (if you have room) and they'd be fine. I found the potatoes with arms and legs kinda creepy on Yahoos home page today.....I will never eat another potato the same.....

Left peeled and exposed to air, they turn black and nasty.
Use small red potatos and you don't need to peel them at all. Just don't use any waxy potatos, like new.

yeah i do that all the time, peel and steep the night before, is a great help, you could even boil/steam and then reheat next day in the microwave, don't think they would mash though

Peel them & par-boil them, rince them & keep them covered in water. Then finish cooking them tomorrow.

absolutley, just remember to add a tablespoon or two of lemon juice or white vinegar to the water to discourage discoloration
