Homemade Cherry Pie Filling

4 cups cherries, rinsed, stemmed and pitted
1 cup granulated sugar
1/4 cup lemon juice
4 tablespoons cornstarch
1/2 teaspoon almond extract
Combine cherries, sugar and lemon juice in a mixing bowl, stir and let sit for at least 6 hours, stirring occasionally to dissolve sugar. Drain off and reserve cherry syrup.
Combine a small amount of syrup to cornstarch to make a paste, then whisk cornstarch paste back into syrup. Pour mixture into a saucepan and cook over medium heat, stirring, until the sauce thickens. Stir in the drained cherries and almond extract.
Cool, and store in sterilized, airtight jars or freeze in heavy freezer bags.
Makes about 5 cups.

2 (250 g) jars pitted cherries
1/2 cup water
1/2 cup sugar
2 tablespoons cornstarch

In a saucepan, cook cherries in water for 10 minutes. Mix together the sugar and cornstarch; add to cherries. Cook cherry mixture until thickened. Cool slightly before using to fill pie shell or other dessert.

Believe it or not one of the best receipes for cherry pie filling is on the side of the tapioca box. Tapioca is a great thickener for pies instead of flour. I find the best pies start with tart cherries instead of the fake tasting canned pie filling. Tart cherries can be found canned and if you're lucky, frozen. Pedersen farms brand frozen cherries already have the sugar and thickener in them. You just put in a pie shell. Also, it's really good to use almond extract in your cherry pie. Good luck. It's really easy, just look on the tapioca box.

Go to WalMart
Go to Baking Aisle
Find pie filling
Find cherry pie filling
Pick up
Carry to check outs and pay
Go home
Make pie crust put in pie dish
Open can of cherry pie filling
pour into pie crust
put another pie crust on top or lattice it
Brush top crust with egg white
Put sugar over egg white on crust
Bake in a 350 degree over for 20 minutes or until crust is golden

In all honesty, I like canned cherry pie filling. But in a saucepan I add a good splash of brandy and a bit of almond extract. Cook it down just a little and use that.

It's also great over ice cream or pound cake!

Hawaiian Millionaire Pie

"This version of Millionaire Pie has pineapple, walnuts, and maraschino cherries."
Original recipe yield: 1 - 9 inch pie

INGREDIENTS
1 (9 inch) pie crust, baked
1 (15 ounce) can crushed pineapple, drained
1/4 cup lemon juice
1 (12 ounce) container frozen whipped topping, thawed
1/2 cup maraschino cherries, chopped
1 (14 ounce) can sweetened condensed milk
1 cup chopped walnuts
DIRECTIONS
In a large mixing bowl, fold pineapple, lemon juice, whipped topping, cherries, condensed milk, and walnuts together. Pour into pie shell and chill for at least one hour before serving.
