Classic New York Cheesecake



1 1/4 hours 20 min prep



Crust

1 cup graham cracker crumbs
1/4 cup melted butter
1/4 cup sugar

Filling

3 eggs
1 1/2 cups sour cream
2 teaspoons vanilla
1/4 cup sugar
2 tablespoons melted butter
2 (8 ounce) packages cream cheese



1. Mix well the crust ingredients, and spread in bottom of a spring form pan. With a mixer, mix the eggs, sour cream and vanilla.

2. Blend 1 minute.

3. Add the cream cheese, sugar, and butter. Mix well.

4. Pour in pan on top of crust. Bake at 325°F for 45 minutes to 1 hour.

5. Immediately turn off the oven and broil the top until golden brown-Watch carefully as it burns easily.


6. (option) I like to top mine with cherry or blueberry topping, such as Comstock's.

What is regular cheesecake?
There is French Cheesecake. New York Cheese Cake -which is what americans seem to enjoy, (but it is very heavy and rich) and Italian-which is a lot lighter than the NY and French. I like Italian cheesecake and this receipe.


1 1/2 pounds ricotta cheese
1 (8-ounce) package cream cheese
3 large egg yolks
1/2 cup granulated sugar
2 tablespoons brandy
2 tablespoons vanilla extract
2 graham cracker pie crusts
1/4 cup chocolate syrup
In a large mixing bowl, combine together ricotta cheese, cream cheese, egg yolks, sugar, brandy, and vanilla, beating until well-blended.
Pour into 2 (9-inch) graham cracker pie crusts and drizzle with chocolate syrup.
Bake in a 350°F (175°C) oven for 30 minutes, or until the center is set.
Makes 16 servings.

For a Fruitier Cheesecake-Note-I like to use a gingersnap crust and incorporate lemon juice-I use 1/2 lemon juice and half vanilla and zest of lemon into my filling.
Use an orange liquor instead of the brandy

An Italian cheesecake is so much lighter and fluffier than ny cake.

Also, if you want to marble the cake with a fruit purre, just reserve 3/4 cup of the batter and add purree and seasoning-If the batter starts to thin out on you because of additional sugars-whisk in some flour.

What's "regular"?

There's New York style, French style, Italian style - the list goes on and on!

My best is Italian - 1 lb ricotta cheese, 1 lb cream cheese, 1 cup sour cream, 1 cup fine granulated sugar, 4 large eggs beaten, 1/4 cup melted butter and the grated rind of 1 small lemon. This cheesecake is made in a springform pan and you can either make a sweet butter pastry crust or a graham cracker crust. Grease the springform pan, press the crust to the sides and blind bake for 15 minutes in a 150C oven. Pour your cheesecake mixture (best to mix ingredients with a mixer or food processor rather than by hand to avoid lumps) into the crust and bake for an additional 30 minutes in a 200C oven until golden. It makes its own delicate crust, is not too sweet, and believe it or not, not too rich.

Take two of the regular rectangles of cream cheese and then a small square one. Make sure they are softened. Combine the cream cheese, 3 eggs, and 1 cup of sugar in a large mixing bowl and mix with electric mixer until runny/liquidy. Add mixture inside of a pie crust or graham cracker crust and bake in the oven for 1 hour at 325 degrees. Take out of oven and let cool for a few minutes. Refrigerate until cold. If you want, you can add fruit topping or chocolate sauce before serving. This is a guaranteed success.

Otherwise, I'd check out the store - there is a simple recipe on the back of the cream cheese package.

Philadelphia cream cheese, can eagle brand sweetened condensed milk, lemon juice and a graham cracker pie crust. Put you lemon juice in to your taste.
