This is easy and you don't even need to measure. Boil some peeled yams or use drained canned. If you boil cut let cook and cut into bite size pieces. Put the yams in a casserole dish, dot some butter over them and put brown sugar over also. Bake 350 for about 15 minutes, add a layer of marshmallows and put back in the oven until the marshmallows brown. Easy, breezy.

I used raw yams this year because I think the canned yams are a bit too mushy. I peeled them, cut in 1/2, boil about 10 minutes in some salted waters, drained, let cook and cut into bite size pieces. They are in the fridge tonight and I'll assemble the casserole tomorrow.

Candied Yams

Made with fresh or canned yams and topped with marshmallows, this is a Thanksgiving favorite.
INGREDIENTS:

* 1 can yams OR 4 Fresh yams
* 1/4 cup butter
* 1/2 bag miniature marshmallows
* 1/2 cup Orange juice OR 1 orange, sliced
* 1/4 cup Brown sugar

PREPARATION:
Drain yams and discard liquid. Arrange in baking dish. Pour orange juice over yams. Sprinkle liberally with brown sugar. Dot with butter. Sprinkle with marshmallows, if desired. Place orange slices on top.

Bake for 30 minutes at 350 degrees or in any oven temperature (for example, along with the turkey) until marshmallows melt and liquid is bubbly.

Serves 6.

my mom used to get the canned yams, put them in a casserole dish, sprinkle spices (any you like) and brown sugar. put them in the oven with the rest of the stuff when you're ready to eat, put the marshmallows on top and let them brown. Careful, they brown up fast!

There aren't really step-by-step instructions. There are different ways to approach each turd. Sometimes it's just like putting lipstick on a pig, sometimes it's like trying to explain to your significant other how you ended up passing out in your car with some other person's underwear over your face.

(shudder) Ugh, what horrible things to do to innocent sweet potatoes!

Seriously, though, this year why not try just microwaving them whole, peeling, slicing, and serving up au naturel? Yams have a lovely flavor of their own; it's a shame to hide it under all that goo.
