I'm rolling out my pie crusts and it's cracking instead of stretching. What can I do to it to make it stretch and not crack??

Thanks! I put a little shortening on my hands and sprinkled some ice water on my dough and started rolling again. It worked!
My apple pies are beautiful! Thanks for you help everyone!!

Increase your fat (butter, lard, shortening) and use ice water. When the pastry cracks, it means you have too much flour in the mix.

Cracking can be a sign of too much shortening. Wet your fingertips with water and gently press the crust in the pan. It will work because I just did it with my pecan pie and it turned out beautiful.

Your dough is drying out. Add a little water to you dough. Make sure it's nice and cold though.

It's okay, you can pinch the cracks together once you put it in the pan/dish............

You need to put more butter. to make softer.
