Hey Now...

A Warm Bacon Dressing...

3/4 to 1 pound chopped fresh bacon

3 tsp honey
Salt, to taste
Freshly ground black pepper, to taste
1/2 to 1 cup peeled and thinly sliced Vidalia or sweet red onions optional
3 eggs, boiled, chopped -- optional

In a heavy frying pan, stir and fry bacon over medium low heat until fat is rendered.
Remove bacon to uncoated paper plate or paper towels to
drain. Set aside reserve bacon drippings and with a wire whip, combine them with the mustard, vinegar and honey. Blend until smooth, Season to taste with salt and pepper.

Toss spinach salad with warm dressing*

Optional:
and garnish with diced eggs and onions

* Note: Some people like to stir in the spinach with the dressing for just long enough to wilt the spinach.

I would put a teaspoon or so Dijon mustard in the bottom of a small lidded jar, then add a teaspoon of balsamic vinegar, 2 teaspoons of red wine vinegar, salt and pepper to taste. Shake it up well, then add 1 tablespoon walnut oil (if you have it--it'll still be good without) and 2 tablespoons extra-virgin olive oil (a bit more if you're not using the walnut oil) and shake again. I use this on my spinach and apple salad with shallots and toeastedwalnuts. I think it would work well on your salad too. Happy eating!

Raspberry vinaigrette, Wishbone Honey Dijon vinaigrette, or Poppy Seed Dressing.

A very light lemon, balsamic, or white wine vinaigrette. There's a great restaurant around here who serves something similar, but with candied walnuts and gorgonzola crumbles. Their dressing is so light but so flavorful.
