Lower the temp 25º when using convection oven and a recipe calling for a conventional oven. The fan speeds cooking, and leaving the temp the same will give you burnt food.

I would leave fan on at about 375 and then when nice and brown lower temp. about 25 degrees and turn fan off and slow cook for about 1and half hours or until drumstick can easily be moved away from body. Happy Thanksgiving
