The fat is trimmed off prior to being dried. With any cut of meat, most of the fat must be trimmed off in the process because it does not dry, as a result, good quality jerky typically has less than 3% fat content.

The beef selected is naturally lean and low in fat. I you want even lower, try turkey jerky

Because it's made from lean meat. Fatty meats would go rancid in the drying and storing of jerky.

Because fat doesn't dehydrate so it is removed prior to processing.
