do with the way one critter is the lead animal. All other animals in the group follow the lead animal. In fact they will follow the lead animal right on over a cliff if some event starts a mass panic.

It's called the "horning order". There is always a lead cow, horse, sheep, etc. that the others follow. When this animal walks, the others follow. When this animal grazes, the others follow suit. They usually aim in the same direction so that they can keep an eye on the leader.

Because they are herd animals and their behaviour isn't haphazard. If they all wandered off in different directions, they'd get seperated and picked off by predators.
The herd leader determines which way they go. They all swing their heads as they graze and so at least one pair of eyes is looking in any direction.

they are allmoving in the same direction as a group, there is safety in numbers so if they move together in the same direction while feeding they stay closer together and can take an enemy out as a team and take less damage

If you notice they are usually facing away from the sun. This is more pronounced during sunset. They must not like sun in their eyes.
