This is my first time cooking a turkey. It is easy to recognize the neck, but how can I tell the gizzard, liver, and heart apart from each other?

This is my first time cooking a turkey. I want to make giblet gravy, and the recipe I am using tells me not to use the liver. How can I tell the liver, heart, and gizzard apart?

The Liver is a rather flat dark red piece with no particular markings on it about 3 to 4 inches long, about 2 to 3 inches across. The heart is like a dark red jalapeno pepper shape not much longer than 2 or 3 inches and roundish. The gizzard is shaped like two sacs side by side. Good Luck.

Im sure you have it figured out by now but, the neck looks like the shaft, the heart is shaped like the head, and the gizzard looks the balls. What you have left over is the liver

the heart is the smallest piece, and is quite firm. The liver is not as firm and is very dark. The gizzard is kind of round and very tough. You can simmer them all, including the neck, in a pan to make the stock for gravy.

This is weird--the liver is the part I LIKE to add to gravy, but just not all of it...the gizzard is the bi-lateral sided one, the heart is compact and shaped like a heart! They are both tough and it kinda freaks me out to chop them up---at least the liver seems "normal" ----good luck! I'll be working on MY turkey and gravy later today!

The gizzard is definetely NOT the neck.

The gizzard is kind of rubber feeling and usually has two bumps in it.

The Heart is like a rounded triangle (but fatter).

The liver is squishey - dark red.

I am confused by you comment about not 'supposed' to use the liver -- why not? We do every Thanksgiving.

The heart is shaped almost like the end of your thumb.
The liver is maroon & soft and more flat.
The gizzard is maroon, with fat & gristle. It is more firm than the liver.

The liver is the deep burgundy, soft wiggly thing.

The heart is gray-beige and sorta pointed on one end.

The gizzard is deep red and you can see white fibers on the outside. It's pretty tough.

The neck is the neck (long and curved, thin and bony)

the gizzard is the two lumped thick walled one, liver is the uniform looking brown thing, and the heart is the red lumpy one.
