Sweet Potato Fluff
3 cups mashed cooked sweet potatoes (8-10 fresh or two large cans)
½ cup sugar
¼ cup melted butter
1 (5 oz.) can evaporated milk
¼ tsp. kosher salt
1 tsp. vanilla
1 egg (optional; include if you want a stiffer consistency)
Dash of each: cinnamon, nutmeg, dry orange peel
Topping:
½ cup brown sugar
½ cup chopped pecans
½ cup flour
2 Tbsp. butter
Preheat oven to 350ºF. Combine topping ingredients w/ a fork until crumbly; set aside.
Beat potatoes well with a mixer until fluffy. Stop and remove any strings from the beater at least twice. Stir in remaining ingredients and pour into a greased casserole dish.
Sprinkle topping on potatoes and bake for 40 minutes.
Serves 8.

If you use fresh SP's, wash, poke w/ fork, and nuke for 12-13 minutes for 3-4 large ones. Squeeze adn you will feel if they are done. Let coll enough to handle them (or hold them w/ a pot-holder) and scoop flesh out into mixing bowl.

Bruce's® Quick Candied Yams
1 40-oz. can Bruce's® Yams
½ cup Butter
1 cup White or Brown Sugar
1 cup Syrup from can
Place Yams in a shallow baking dish. Combine syrup from can, sugar and butter in saucepan, stirring to boil to thicken. Pour sauce over Yams. Bake in 350° oven for 20 to 30 minutes, basting frequently.
*Vary the above recipe with these taste-tempting garnishes:
Sprinkle lightly with ground cinnamon and/or nutmeg.
Place a few slices from a whole orange on Yams in dish and add 3 Tbls. Orange juice to liquid before basting.
Place a small sprinkling of crushed pineapple on Yams in dish and add 3 Tbls. Pineapple juice to liquid before basting.

No, but I bake my sweet spuds in the m/w. so can you. start w/5 min for av. size s/p, and if not done m/w a little more. Let cool, dig insides out. that's it.
Or peel them before hand and m/w 4-5 min/ spud peeled.

i wrap each one in aluminum foil and bake them for a while... then when they are done i put butter and brown sugar inside. its delicious. try www.allrecipes.com sweet potato caserole is heavenly too....
