Years ago a family friend used to make the best potato pie (white, not sweet) with bits of bacon or ham. She has long since passed and I was wondering if anyone out there has a real good, tastey potato pie recipe?

I really liked the baked potato recipe,it was closer to what I remember and very good. I'll try the other recipe next. Thanx :)

Two recipes in one, and both delicious! Enjoy the appetizer recipe while you are letting the other one bake. Cooking time is for pie recipe only. Slightly modified from Houston Livestock Show & Rodeo 50th Anniv. cookbook.

3 medium baking potatoes, baked or microwaved,but baked is better
1/4 cup chopped green onions, tops only or chives
4 tablespoons butter
1/4 cup bacon bits or 2-3 tablespoons packaged bacon bits (bacon fried crisp and crumbled is best of course)
1/2 cup sharp cheddar cheese
1/2 cup sour cream (light is fine)
salt and pepper
For Appetizers
2 tablespoons melted butter
Tabasco sauce
salt

Cut the baked potatoes in half lengthwise.
Scoop out carefully, leaving potato shells thin and intact- set aside for appetizers, below.
Mash the scooped-out potatoes with a potato masher, adding the butter, sour cream and green onions.
Season well with salt and pepper.
Spray a 9" glass pie plate with cooking spray and spread baked potato mixture in the plate.
Top with the grated cheddar, and bake 15 minutes at 350.
FOR THE APPETIZERS:.
Brush the insides of the empty potato shells with the melted butter.
Sprinkle each one with a dash of Tabasco and salt.
Cut the potatoes into 1" strips, and place on cookie sheet.
Bake at 450 for about 15 minutes or until crisp.

Sweet Potato Pie:

Prep Time: 15 min
Total Time: 1 hr 20 min
Makes: 12 servings

45 NILLA Wafers
1/4 cup plus 1 Tbsp. butter or margarine, divided
2 Tbsp. sugar
1 can (40 oz.) sweet potatoes, drained
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/4 cup sugar
1/4 cup dark corn syrup
2 eggs
1 tsp. pumpkin pie spice
1 tsp. vanilla
1 cup JET-PUFFED Miniature Marshmallows

PREHEAT oven to 325°F. Finely crush 35 of the wafers; place in medium bowl. Melt 1/4 cup of the butter. Add to wafer crumbs along with 2 Tbsp. sugar; mix well. Press firmly onto bottom and up side of 9-inch pie plate. Melt remaining 1 Tbsp. butter. Coarsely crush remaining 10 wafers; place in small bowl. Add melted butter; mix well. Set aside for later use.

PLACE sweet potatoes, cream cheese, 1/4 cup sugar, the corn syrup, eggs, spice and vanilla in medium bowl. Beat with electric mixer on medium speed until mixture is well blended. Pour into crust.

BAKE 1 hour to 1 hour 5 min. or until knife inserted in center comes out clean, topping with the wafer mixture and marshmallows after 55 min. Cool completely on wire rack. Refrigerate until ready to serve. Store leftover pie in the refrigerator.
