I've made these before and they are great, especially if chilled in the fridge for a few hours first.

Use the no-bake recipe that wingandw answered, but add vanilla to that list. You can use either pure vanilla extract or immitation vanilla extract. Put the sugar, butter, milk, and cocoa in a pot and bring to a boil. Continue boiling until around 4 or 5 minutes. While that is boiling please continue to stir. Get either plastic wrap or wax paper and lay it out on the counter. Have your peanut butter, Minute Oats, and Vanilla extract ready. Take the mixture off the stove and immediately add a tablespoon of vanilla. This will fizzle and it's normal. Add about 2 big scoops of peanut butter and stir that in until it's smooth. (you will want to do this as quickly as possible) Add the oats. Keep stirring. You may not need all 4 cups. If the mixture gets too stiff, add a little more milk. Dip out spoon sized cookies onto either wax paper or plastic wrap. You can use aluminum foil as well and it works just the same. They will be hardened in about 2 minutes. Enjoy.
Just a little tip--- continue to stir the mixture constantly to reduce sugar overwelming the taste. Take cookies off of paper and keep covered in airtight container. Thank you.

No Bake Cookies

Ingredients:
2 cups sugars
1/2 cup milk
1 stick butter
4 tablespoons cocoa
3 cups oats
1/2 cup peanut butter

Instructions:
mix first 4 ingredient in saucepan bring to a boil and boil for 1 1/2 minutes at oats and peanut butter and then drop by spoonfuls on wax paper.

Mom’s Yummy Terd-looking No-Bake Cookies
(originally from a church of the firstborn cookbook)

2 cups sugar
½ cup milk
¼ cup cocoa
1 cube margarine

Put above ingredients in saucepan, bring to boil, add:

3 cups quick oats
½ cup peanut butter
1 cup chopped nuts
2 tsp. vanilla

Stir until well mixed, drop by teaspoonful on waxed paper. Makes about 4 dozen.
