They don't! Eyes are the little roots which start to sprout out of the potatoes.

What we call eyes in potatoes, are the leftover bits from the roots which have been broken off, I don't realize what you mean by 'frost'.
I suppose they are called eyes because like eyes, they are small and stick out a little.
A common saying is that potatoes have eyes so that they can see you through the week.

Don't think people do,do they? The eyes are the potatoes starting to sprout shoots ready to grow. Frost in potatoes makes them go black

never heard of frost in potatoes ! eyes are where the shoots were starting to sprout out.

They don't. Sprouts growing on the outside are called eyes.

i didn't think they did...
i thought potato eyes were the tubers that came from them... the shoots that grow out of a tattie to grow into a new one...
