Do you like Mexican food? Have access to a store which sells mole'?
You've probably heard of chicken enchiladas made with mole' sauce. Well, a little trivoid, the traditional recipe is made with shredded, cooked turkey, not chicken. Light meat, dark meat - doesn't matter.
I mix my shredded turkey meat with half the mole; (thinned with water or, better yet, poultry stock) and heat through. Make sure you've got a lot of sauce as you don't want the turkey meat to dry out. Then grease a rectangular glass oven dish, preheat the oven to 200 and make your enchiladas. I prefer corn but some people prefer flour. You will want to fill the tortillas a little more amply than you would fajitas or Peking duck pancakes as you are not going to be picking them up. You fold the tortillas around the turkey mix and arrange in the glass dish. Then pour the rest of the mole' sauce over the top of the enchiladas, and top with grated Monterey Jack cheese. Put a little water in the pan around the enchiladas. They will keep them moist - don't worry about the tortillas, they're hardy things. Bake for about 25 minutes until the enchiladas are browned and cheese is bubbly and toasty. Serve hot with rice and salad.

I love to make Thanksgiving casserole the weekend after Thanksgiving. Basically I take all the leftovers from dinner and layer them in a casserole dish, topping it off with the mashed potatoes. It works best if you start with the green bean caserole, then do the turkey, the gravy, then stuffing, then top with potatoes. Get creative though- I don't do sweet potatoes but I bet if you like them they will be good in there. I make a cheesy corn casserole that is delicious in there too.
You can also completely change the flavors of your leftover turkey- use it in enchiladas or in chilli, make a turkey curry, or put it in any recipe you would use shredded chicken for.

At our house we make Turkey Tetrazzini and everyone loves it! Here's the recipe:
TURKEY TETRAZZINI
6 oz. spaghetti, cooked
1/4 c. butter
1/2 c. flour
2 2/3 c. chicken broth
1 c. cream
1/4 c. sherry
1 tsp. salt
Pepper to taste
1/2 lb. mushrooms
1/2 c. chopped green peppers
1 c. grated Parmesan cheese
In large pot, melt butter; add flour and whisk. Add wine, cream, seasonings, cheese, turkey, mushrooms and green peppers. Place cooked spaghetti in bottom of baking dish and top with tetrazzini mixture. Bake at 325 degrees for 30 minutes.

TURKEY-GREEN CHILE ENCHILADAS
SAUCE:
2 tablespoons vegetable oil
1 large onion, finely chopped (1 cup)
2 cloves garlic, finely chopped
1 cup chicken broth
2 tablespoons semisweet chocolate chips
1 tablespoon ground ancho chiles
1 teaspoon ground cumin
1/2 teaspoon salt
1 can (28oz) fire-roasted crushed tomatoes, undrained
ENCHILADAS:
2 cups shredded cooked turkey
1 cup sour cream
1 1/2 cups shredded Cheddar cheese (6 oz)
2 cans (4.5 oz each) chopped green chiles, undrained
1 package (11.5 oz) flour tortillas for burritos (8 tortillas)
1 cup shredded pepper Jack cheese (4 oz)
1. Heat oven to 350F. Lightly spray glass baking dish with cooking spray.
2. In skillet, heat oil over medium-high heat. Add onion and garlic: cook about 1 minute, stirring frequently, until onion is tender. Stir in remaining sauce ingredients. Heat to boiling. Reduce heat to low; cook uncovered 15 minutes, stirring occasionally.
3. In medium bowl, mix all enchilada ingredients except tortillas and pepper jack cheese. Spread about 1/2 cup turkey mixture over each tortilla; top with 2 tablespoons sauce. Roll up tortillas. Top with pepper jack cheese.
4. Spray sheet of foil with cooking spray; place sprayed side down over baking dish. Bake 30-45 minutes or until thoroughly heated. 8 servings

My family does a Turkey Dumpling soup.
You can use any chicken dumpling soup receipt you find. It goes along great with turkey sandwiches and reheats great.

We have friends who invite us over the day after thanks giving for Turkey Taquitos and Margaritas it is so much fun and good with guacamole It sure beats trying to go out and shop on black friday
