I have enough batter to make about 3 more pies and dont feel like running out to the darn store...lol

bake it without the crust, it will come out like baked custard.. just spoon it out in dishes..

If you have crackers make a cracker crust.
1-1/2 cups graham cracker crumbs
2 tablespoons granulated sugar
6 tablespoons butter/margerine/shortening, melted
Preheat oven to 350° F. Combine all of the ingredients in a medium bowl. Press into the bottom and sides of a 9-inch pie plate. Bake until set and golden, about 8 minutes.

You can use bread crumbs, Ritz crumbs, and saltine crumbs as well. For these, add some thanksgiving spices such as nutmet, ginger, or cinnamon.

You don't need a crust! What you have is raw pumpkin custard - which means you can cook it like custard - in a glass or ceramic oven dish (3 more pies, I guess I mean "dishES"!). Grease the dishes and cook as you would the pie (same time and temperature, assuming you have pre-baked your pie crusts).

If you like your custard on the lighter side and if you have eggs and milk left over, I would suggest whipping up some custard then adding your pumpkin custard to it before baking.

You can stilll make pies out of it, they just wont have crust. I do it all the time. just pour them into glass baking dishes and cook as it is. It tastes just as good.
