Rosemary, garlic and olive oil are a good combination. It's always nice to rub down the bird with oil and then get some rosemary underneath the skin so the flavor really soaks into the meat.

I never use oil. Butter tastes better. Try this. It's not as hard as it might sound. Melt 3 sticks of BUTTER, add 2 teaspoons of poultry seasoning. Allow butter to sit & get solid, but not hard. Using your fingers, GENTLY peel skin back from turkey . Put small pieces of butter mix under skin, all over breasts. Save some of butter mix & rub over outside of bird. Bake as you normally do. I like to baste w/juices every 30 minutes or so. It's so delicious you can't believe!!

Hmm... Try basting it with some kind of cooking oil or butter, and then add spices. Baste it once or twice while cooking if you aren't using a cooking bag or foil. I think you have it down there, good skin isn't too complicated. You could get creative if you want, it's the part people usually eat first anyway!

Rosemary, Sage, Garilc. Whatever spices you like. Just put whatever spices you use under the skin with some butter.

We usually wrap the outside with strips of bacon, and put an apple or two in each cavity. Bake in a covered roasting pan, or use a baking bag. Save the fancy spices for the dressing (or stuffing or whatever you want to call it.)

Sprinkle it with powdered garlic then coat the whole bird with mayonnaise. The bird cooks evenly and the breast is moist and juicy. An Italian lady told me this and every time I make a turkey everyone thinks it is moist and TASTY!

I rub my bird with butter, salt, pepper, sage and poultry seasoning.
Use chicken broth and water for baking and basting purposes. It comes out nice and brown and moist. Enjoy!!
