is it better to peel the potatoes before or after they are cooked and why?

Peel before. You'll have labor involved in scrubbing them clean enough to boil. And it will be very hot to handle to peel them after they're cooked. Also the cooking in water will reduce quite a bit of the starch content.

I find it better to peel before cooking for mashed potatos. They are too hot to peel just after cooking and you want your mashed potatoes hot. Also, if you don't get all the peels off someone might get it mixed in with their serving. That happened to me, so I know it can be done. If making potato salad I leave the skin on and let cool after cooking and then peel. Enjoy your potatoes.

leaving the peels on is healthier. that is where the nutrients are. You can eat mashed potatoes with the skins on. Its good! The peels will fall off and make a mess if you try to take the peels off after you cook them, so if you dont want peels, peel the potatoes before cooking!

If you don't want peels in your mashed potatoes it's better to peel them before they're cooked because that's a lot easier. Cooked potatoes are not only crumbly and difficult to handle and peel, but they're also really hot and not too pleasant to handle. If you wait until they're cool enough to peel, they won't be able to melt the butter which I'm hoping you're going to put in.

I always peel before. Peeling the potato after cooking it is too hot to hold. I know the skin comes off easier this way but I don't want to burn my fingers.

Peel before and cut into bite size pieces. They will cook faster that way and then after you drain the water off, you can just add the milk and butter to the hot potatos and whip it up.

All these answers are good. But I wanna share a secret with you to go along with these recipes that you got from everyone. Ok! Before you mash or stir in milk and butter. After draining the potatoes, you leave in pot and place a clean towel over it for 5 min. This aborbs the rest of the water from the potatoes. Then add the milk and butter to your potatoes. If you add to much liquid then place a towel back over it and it will suck up the liquid. Cool huh? **Edit** Always peel your poatoes and cut in chunks before cooking!!

I peel before because they are too hot to peel when they are done boiling. Plus by the time you're done, they'll be cold. Some people keep the skins on for more vitamins.

I use red potatos. Better taste. I clean them & cut in small pieces w/skin on. Boil & mash with skin still on. You can't even tell & you're getting good vitamins with skin still there. If you're not using with gravy, I add some garlic while mashing. YUMMY!!!

I like the taste and appearance of the skins, so I don't usually peel them at all.

BUT! If you like 'em skinless, and perfect...

Get a potato ricer (http://www.amazon.com/Cuisipro-Stainless-Steel/dp/B00004SU1J) boil your spuds, cut them in half, and drop them, cut face side down, into the cup. One good squeeze and you'll have all the 'tato out (and lumpless, light and fluffy), and the skin still in the ricer!

Too cool!
