Yes, it matters. You don't want to eat it if it's dead before you cook it. Don't worry about the guilt - lobsters don't have enough of a nervous system to register pain. And the "scream" you hear people talking about it simply air escaping into the water.
If you want to alleviate your guilt, put the lobster into the freezer for a few minutes before you cook it. That will make it unconscious. Oh, and make sure you put it in the boiling water head first. Then it will die instantly.

You can ONLY cook the lobster if it's alive. Boil it in salt water. If the lobster is dead DON'T COOK IT. You'll have a very good chance of getting food poisoning.

This is VERY important!
A DEAD lobster is NOT to be cooked or eaten! As soon as they die, certain, ah, 'processes' are kicked off and the lobsters innards go 'bad' almost immediately.
When I say 'bad', I don't mean 'mild stomach upset', I mean 'screaming agony in the emergency room and if you live several days in the hospital with raging diarrhea and incredible pain, possibly damage to internal organs, paralysis, coma and death'.
Ok. Maybe that's a TAD overdramatic, but if your lobster ain't alive and kickin', it's fertilizer.
If you're tenderhearted, put the critter in the freezer about 30 minutes before you cook it. It'll 'go to sleep' and there won't be any of the stuff you're worried about.

There is no "humane" way to prepare fresh lobster. Because I can't bear the "screaming", I put a long pin between the thing's eyes. That basically renders it braindead and immobile. Whether it is really dead, who knows, but at least you can avoid the horrible noise when you put it in the pot or oven.

I could never cook anything alive! I think it is horrible how people cook them! To the people who say it doesn't hurt...imagine having your head dunked in boiling water and tell me that wouldn't hurt!!

They have to be alive when you cook them - can't avoid that. Ask your fish guy, but they should stay alive over night. Put them in the freezer 10-15 minutes before you cook them (they fall asleep) then you avoid watching them boil alive.

you have to cook the lobsters alive, because if you cook it dead, people will most likely to get food poisoning from it. and cooking it alive is fresh.

I won't eat lobster cooked any way. Do you realize they are scavengers and eat all the waste on the bottom of the ocean? Do you really want to eat something like that now? Also, I love all living creatures and hate the thought of killing them.

honestly..beingin the resturant buisness for over 15 yrs.. have you eaten at a seafood rest that has a lobster tank? they take the lobster from the tank to the pot..

I have a friend who is a chef at a high end seafood restaurant , he always cooks them live and throws them out if there dead .
