Kittens do this a lot when they are playing or scared. It makes them appear larger to something they consider a threat.

They want themselves appear bigger. The turn on the side and the patch of fur that runs down their back all the way to the tip of their tails puffs out. I've mostly seen kittens do it while playing but, my cat did it once when a strange dog came in the yard.

that is because they might think something scary will come at their way... and they will move to the side...and since they get scared..to go faster they hop to the side.

If they think that something is coming towards them, then they're just trying to get out of dodge. They probably jump to the side, because jumping back or forward, they'd still be in the path of whatever they thought was going to get them.

The same reason a good fighter will do the same: to keep from getting hurt.
They have karate classes to teach this to humans, but cats know it already.
