it is just my fiance and our kids an i tommorrow and my kids hate turkey...i figure thanksgiving is a day to have a meal you like so for the kids i am making chicken nuggets and i think cornich hens would be a good alternitive to turkey for us adults...
i alos dont know how to cook them (seasoning and what not....)
any suggestions?

Yes they are takes about an hour. You can stuff them with any dressing you want, I use wild rice and mushrooms. Wash them, dry off rub with salt pepper and sage, I use garlic to. Put in a pan and roast for an hour. My wild rice and mushroom dressing, 1 box uncle Ben's wild rice, in a skillet cook 1 cup onions and 1/2 lb of what ever mushrooms you like. cook rice as box instruction fold in onions and mushrooms stir in 2 beaten eggs and a little extra chicken broth stuff chickens. When they are done remove from pan and let set for 20 min. Put pan on burner and add 1 cup of chicken broth and 1/4 cup white wine cook till reduced by half, stir in butter a little at a time till it is thick as you like.

They are a tiny chicken... the hard part is all the tiny bones, not cooking the bird. Get stuffing and cranberries and stuff it. Cook it covered in some way because it will have a easier chance of drying out.
btw, I love the idea of your non-turkey day. next year I'll try it. I just heard that my kids don't care for THE turkey either.

Why not get a couple of whole chickens and bake them like a turkey?

They are extremely easy -- bake them just like you would chicken. I usually use butter, salt & pepper. I stuff them also, but you don't have to. Enjoy & Happy Thanksgiving.

cook them just like turkey, dont forget to baste them often , they dry out easily, spices are what ever you want/have handy
