There are two kinds of sweet potato pie recipes - crusted and non crusted. With my recipe the filling is the same and you can either put it in a crust or not with a simple alteration:

For the Filling:
2 Large cans of sweet potatoes in syrup
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 egg
1 can sweetened condensed milk
1/4 cup heavy cream
2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
1 teaspoon vanilla or brandy flavoring
3 tablespoons orange juice

Drain the sweet potatoes. In a food processor pulse the potatoes on high mostly smooth. Add both sugars and egg. Blend until completely smooth. In a separate bowl combine the condensed milk, cream, spices, juice and flavoring of your choice. With the processor on low slowly add the cream mixture in a steady stream until completely combined.

If you are making a crust pie then prepare a single crust as you would any other pie. Spoon the batter into the pie crust and bake at 350 degrees until the center of the pie is set - about 35 minutes.

If you are making a crustless pie then spoon the batter into a casserole dish and bake at 350 degrees for about 30 minutes or until the center is set.

Optional - you may top the pie/casserole with mini marshmallows after it has cooled and broil for 1 minute until they brown.

Sweet Potato Pie recipe
Made with butter and sweet potatoes, along with vanilla and cinnamon.

INGREDIENTS:
·4 ounces butter, softened
·2 cups cooked and mashed sweet potatoes
·2 cups granulated sugar
·1 small can (5 ounces, about 1/2 cup plus 2 tablespoons) evaporated milk
·1 teaspoon vanilla
·3 eggs, beaten
·1 1/2 teaspoons cinnamon
·2 prepared pie shells, unbaked
PREPARATION:
Mix butter, potatoes, sugar and evaporated milk until well blended. Add vanilla, eggs, and cinnamon; mix well. Pour into the prepared pie shells. Bake in a 350° oven for about 1 hour, until set. Makes 2 pies.

Good luck! I'm going to watch this question in hopes that there is an easy recipe for it out there. I absolutely love sweet potato pie and try to make it - but I always fail! I'm pretty good at baking - but sweet potato pie is an extreme pie - only for the best!! My advice is that if you try to make it - make sure you also make something easy (like apple pie or cookies) so even if you mess it up you will have something to bring/eat.

got this from emeril it was a hit


1 uncooked pecan pie shell (plain pie crust with ground pecans folded in)
2 cups mashed sweet potatoes
1 cup sugar
2 tablespoons Steen's 100 percent Pure Cane Syrup
1 tablespoon ground cinnamon
1 tablespoon vanilla
6 eggs
1 cup heavy cream
2 tablespoons flour
Fresh sprigs of mint
Whipped cream in pastry bag
1 cup chocolate sauce in squeeze bottle
Powdered sugar

Preheat the oven to 375 degrees F. In a mixing bowl, whisk the mashed sweet potatoes, sugar, cane syrup, cinnamon and vanilla together. Whisk in the eggs, one at a time. Whisk in the cream and flour. Pour the filling into the shell. Bake for about 45 minutes or until the pie is set. Place a piece of the pie in the center of the plate. Garnish with pie with mint, whipped cream, chocolate sauce and powdered sugar.

Sweet Potato Pie:

Prep Time: 15 min
Total Time: 1 hr 20 min
Makes: 12 servings

45 NILLA Wafers
1/4 cup plus 1 Tbsp. butter or margarine, divided
2 Tbsp. sugar
1 can (40 oz.) sweet potatoes, drained
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/4 cup sugar
1/4 cup dark corn syrup
2 eggs
1 tsp. pumpkin pie spice
1 tsp. vanilla
1 cup JET-PUFFED Miniature Marshmallows

PREHEAT oven to 325°F. Finely crush 35 of the wafers; place in medium bowl. Melt 1/4 cup of the butter. Add to wafer crumbs along with 2 Tbsp. sugar; mix well. Press firmly onto bottom and up side of 9-inch pie plate. Melt remaining 1 Tbsp. butter. Coarsely crush remaining 10 wafers; place in small bowl. Add melted butter; mix well. Set aside for later use.

PLACE sweet potatoes, cream cheese, 1/4 cup sugar, the corn syrup, eggs, spice and vanilla in medium bowl. Beat with electric mixer on medium speed until mixture is well blended. Pour into crust.

BAKE 1 hour to 1 hour 5 min. or until knife inserted in center comes out clean, topping with the wafer mixture and marshmallows after 55 min. Cool completely on wire rack. Refrigerate until ready to serve. Store leftover pie in the refrigerator.
