Yes it does. Steam them instead. This takes out much less nutrients and they are crunchy - really good.

Cook in very littel water and do not overcook.
Be sure to wash veggies well and serve raw in some instances.

only if the veggies turn yellow (like broccoli) or tan or white when they're not suppose to be that color. If you cook them in a wok or frying pan, I don't think you hurt the experience of vitamins. (: smile :)
