Place eggs in a single layer in a saucepan. Add enough cold water to come 1 inch above the eggs. Bring to boiling over high heat. Reduce heat so water is simmering. Cover and cook for 15 minutes: Drain and run cold water over the eggs until cool enough to handle.

I boil 10-12 minutes, then immediately put the pan under cold water to cool the eggs, for some reason this tends to keep the yolks yellow and I add the eggs to already boiling water.

After 30+ years of cooking them the Julia Child method, I recently switched over to the Alton Brown (FoodNetwork) method which I prefer:
Boil 1 inch of water in a medium sauce pan with a lid.
When boiling, insert a collapsible steamer and put your raw eggs on the steamer.
Lower heat to medium low, cover pot. The eggs are perfect in exactly 13 minutes.
Place hot eggs into ice water to stop the cooking process.
Perfect every time, no green on the yolk, nice and creamy texture. Try it at least once.

it says in the good cook book, that the bigger the egg, the longer you should boil. Extra large eggs should be done for about 18 mins. I usually just let them boil for a good 20 so that I don't end up with mush. Let stand to cool for another 20. Run under cold water before breaking to make handling easier((cause who want to try to crack a hot egg?))

boil them for a good while.
If you think they are done, take them out and spin the egg. If it spins differently than a raw egg, then it is done.
