We usually make a mixture of cranberry juice, ginger ale and seltzer. We put it in a punch bowl and float sliced oranges on top with ice and fresh cranberries. It is better with champagne but still good with seltzer.

Wassail
1 (46 fluid ounce) can pineapple juice
1 (48 ounce) bottle cranberry juice
1 gallon apple cider
1 1/2 cups cinnamon red hot candies
1 tablespoon ground cinnamon (optional)

Pour the pineapple juice, cranberry juice and apple cider into a large pot. Heat until almost boiling, then stir in the red hot candies. Continue stirring until they dissolve so that they do not end up stuck to the bottom of the pot. Set the heat to low, and let it simmer all day if you like. Ladle into glasses or cups, and dust with cinnamon before serving.

Apple Orchard Punch
1 (32 fluid ounce) bottle apple juice, chilled
1 (12 fluid ounce) can frozen cranberry juice concentrate
1 cup orange juice
1 1/2 liters ginger ale
1 apple

In a large punch bowl, combine apple juice, cranberry juice concentrate and orange juice. Stir until dissolved, then slowly pour in the ginger ale. Thinly slice the apple vertically, forming whole apple slices. Float apple slices on top of punch.

Get a bag of spices for making mulled apple cider. Some you just dump in, I prefer when you leave them in a cheesecloth-type bag. You can also make your own spice bag, with chunks of cinnamon sticks, orange and lemon peel, cloves, and possibly a small piece of fresh ginger. Use equal parts orange juice and cranberry juice, and bring to a boil with the bag of spices in it. Remove from heat and let it brew for a half hour or so, kind of like making tea. Makes a wonderful hot beverage that everyone can enjoy, and it is a great alternative to your typical cider. It also stores in the fridge just fine, and tastes just as good reheated.
