I don't know exactly, but this is what my mom does

boil the giblets with water onion, garlic, salt

Chop up the giblets into small pieces
Mix the giblets & broth in a tupperware of bread cubes (you can slice pieces of toast bread if you want to do that instead)
add in brocolli, mushrooms, the onions - and whatever else you may desire, and stuff it into the turkey

I might be forgetting something, but it tastes awesome!

Okay here goes, same idea with boiling the giblets

you brown flour in a pan, about enough to cover the bottom of the pan, and slowly mix in the broth from the giblets. And just keep mixing it around in the pan so it doesn't get lumpy. Then just stir and stir until it is at the thickness you desire. If you want it thinner, add more broth.

Sorry, I thought you wrote stuffing.

Boil the giblets and neck in chicken stock with celery and onion. When they are tender take out cool and chop take meat off the neck. I usually use some chicken giblets in the pot for more giblets. Some people use the liver too and I do but some do not like the taste of the liver

Boil two eggs to hardboiled stage peel and chop

Take the turkey juices out of the pan and let sit for a time so the fat separates -

take off most of the fat but use about 4 tablespoons in a frying pan and heat on hot with half a chopped onion and stir- add 3 tablespoons of flour (regular) and two tablespoons of butter and stir around so the fat is incorporated into the flour. Kind of let this get a little brown - add two cups of the turkey juice - if you do not have enough juice then add stock to make up the difference. Salt and pepper to taste - Stir and simmer then add the giblets and the egg at the last minute - heat through and serve

Giblet Gravy:

1 tablespoon butter
2 teaspoons olive oil
Giblets, liver, and neck from 1 turkey
1 cup diced onions
1/3 cup minced celery
1/3 cup peeled and minced carrots
2 cloves garlic, peeled and minced
4 teaspoons all-purpose flour
1/4 cup dry white wine
1 1/2 cups chicken broth
1 sprig fresh thyme
Salt and freshly ground black pepper
In a medium, heavy pot, melt the butter and the olive oil over medium-high heat. Add the giblets, liver, and turkey neck, and cook, stirring until brown, 2 to 3 minutes. Add the onions, celery, carrots, and garlic, and saute an additional 5 minutes, or until the vegetables are soft. Stir in the flour and cook, stirring for 1 minute.

Deglaze the pan with the white wine, stirring to incorporate any browned bits from the bottom of the pan. Add the chicken stock, thyme sprig, and any reserved juices from the bottom of the roasting pan, and cook, stirring constantly, until thickened. Strain. Adjust seasonings with salt and freshly ground black pepper.

Yield: 3 cups

Start by creating a stock by adding 4 cups of water the giblets and the neck to a sauce pan, add 1 small onion roughly quartered, 2 rough chopped stalks of celery, 2 peeled and rough chopped carrots, 1 small peeled and chopped turnip or parsnip, 1 clove of garlic peeled and smashed,1/2 teaspoon sage, 1/2 teaspoon parsley, salt and pepper. Allow to cook covered for about 45min to 1 hour (until meat peels easily from neck) strain broth through a colander into a bowl. Remove meat pieces, except neck, from vegetables and chop into small pieces -return broth to sauce pan and bring to a simmer combine 1/4 cup cold water and 1/4 cup corn starch to create a slurry slowly add this to the simmering broth stirring constantly until gravy consistency is reached (about 10-15min) remove from heat and stir in meat. You now have a lovely giblet gravy. You may discard the vegetables and neck as they have served their purpose in creating the broth.

If I can remember how my mom made her gravey. Simmer the giblets for a couple of hours with onion and celery. Remove the giblets and cut them up. Return giblets to pot and add a little cornmeal and a couple of teaspoons of vinegar. Add more cornmeal if needed.

Boil the rest of your parts in separate pan let cool
when your turkey is done use the drippings from the turkey to make the gravy and add the deboned parts and the neck and let simmer for 3-5 minutes.
