Perhaps the meat on the breast side is thinner than the opposite side. So when you roast breast side down, the end result is a more tasty turkey which is not too dry nor tough cos the meat is not overcooked

Cooking the Turkey breast side down allows the dark meat in the legs and thighs to cook fully while keeping the breast meat moist. Breast side up cooks the breast meat first and in order to fully cook the legs and thighs it drys out the breast meat.

I've heard of doing this before! I just think that they want the turkey's juices to flow downwards. So the breast won't be so dry. If you buy a turkey bag I guarantee the breast won't be dry. As long as you follow directions. As long as you follow directions!

It will keep the breast meat more moist if you do this, but it can also cause it to be mis-shapened, so if you are going for a visually pleasing turkey, I would roast it breast side up.
