I think the potatoes will be a discolored disaster is peeled and left overnight. Instead, you could just go a step further--- cook the potatoes until they're just short of being mashable. Then tomorrow it won't take long to finish them off.

When peeling and/or slicing potatoes or apples, put into a bowl of cold water to keep them from discoloring. We add a splash of lemon juice.

Yes.. easy.. Peel the spuds and then put them into cool water.. I always put mine in the refrigerator to keep them and the water cool. I also have not had any problems with the potatoes gettting water logged(as I call it) even after two days.. so have no fear

they are going to be nice. make particular your water point is a few million inch above the potatoes and canopy them in an air tight field. relying on what share you peel, upload some salt to assist shop them crisp and not turn brown. good success.

Peel them and store them in cold water they should be fine. I have done this many times. Make sure they are totally covered with the water. Happy Thanksgiving!!

I think that if you put them in water after they're peeled it will stop them from discouloring.
