I'm sure you're just being hard on yourself. This romantic meal is a homerun every time. I have a list of items & step by step instructions for ya. It's foolproof. Have fun!

Grocery List
1 bag small red potatoes
Whole Milk
sour cream
1 pkg. chives
2 boneless rib-eye steaks
Butter
1 block of good parmesan
1 large pkg. of baby greens
1 lg. English cucumber
Balsamic Vinegar
Xtra Virgin Olive Oil
1 pkg. strawberries
sugar
Decent bottle of Red Zinfandel

1st, Uncork your wine & let it breathe. Scrub potatoes & cut them into uniform pieces so they cook evenly. DON'T PEEL THEM. Put them into cold water & put on stove. Put burner to high. Add about 2 tsp. salt to water. Allow water to come to low boil, cover & lower heat so they just simmer for about 15 min.

In a small bowl, whisk together 1/2 C Balsamic Vinegar & 2/3 C Olive Oil. Add Salt, black pepper, & 1 tsp. digon mustard. Whisk well. This is your salad dressing!

Test potatoes. When they are soft (but not too mushy), drain out the water. Using your electric mixer, begin to blend the potatoes for about 30 seconds. Then add about 4 Tablespoons butter, 1/2 C of milk, 3 tablespoons of sour cream, salt & pepper to taste, and about 8 of those chives, minced. Taste for perfection. Cover tightly to keep warm. DON'T keep on a warm burner, they'll overcook!!!!

Sear the steaks. Heat a heavy skillet to med. high. Put olive oil & 1 tablespoon of butter into pan & let it get hot. Meantime, liberally salt & pepper both sides of your steak. Gently place them in the hot pan (you should hear the sizzle the second they hit), and DON'T touch them for about 4 minutes. Flip them only once. You should see a nice brown crust on cooked side. After another 4 minutes, remove steaks & let them sit for about 4-5 minutes before cutting.

Mix your baby greens w/ some wedged cucumber, and some of the dressing. Put mixed salad in a beautiful shallow serving dish. Thinly slice your steaks on an angle, then place steak slices over salad. Shave some parmesan curls over the plate using a grater or a knife.

Put on some Sinatra. Light the candles. Pour the wine. Serve your rib-eye salad w/ the potatoes. Save the Berries & sugar for a sweet, simple dessert. He won't know what hit him. This meal is satisfying, but not too heavy that he'll fall asleep. *Wink*

Something easy to cook is spaghetti. You can fix it however you choose too. Who says you have to slave over a stove with so many great choices for sauces now. Try a white sauce, Portabella mushroom sauce and try abit of a twist on the noodles, with a blend of wheat rather than all semolina, but if your not use to it go easy first before you jump in totally with whole wheat noodles. And make it with different shapes,,guys seem to love to see the different shapes of noodles than the angel hair pasta. Their kids at heart I think. Smile Then get a great Italian bread, make garlic toast you can also add abit of Italian sausage to the sauce and sprinkle with grated romano cheese and have a salad with Italian dressing and go to the store and ask for a nice wine. If you want to dress it up abit get one of those checkered table cloths and a single candle with red rose and you have a romantic meal that didn't cost you a fortune and easy to make.

I have not had a romantic dinner for a L O N G time.. In your case.. I would have candles and wine of course.. BUT for the meal.. I think I would buy a ready cooked chicken for about $5, mix up some leafy green salad(I am sure you can do that), have some baked potatoes(throw them in the microwave for 5 minutes... have butter for them ready.... get some ice cream for dessert and probably another side dish... Oh, let's see.. maybe some creamed corn(from a can)... heated of course with some butter added... Oh, I forgot.. You can make some of that boxed stuffing mix.. It is easy to make.... You can chop up some onions.. soft fry them first and then add that to the stuffing mix and that is deliciouis.... If kissing is planned, though.. forget the onions.

"Doesn't like cheating?" Is having a competent professional prepare the food considered cheating? What's wrong with take-out from a good restaurant or deli? If I had a guest who criticized such a meal, he would never be my guest again. Of course, I am fortunate to have the Ben Lomond Market just down the hill, so maybe I don't know what it's like elsewhere.

Yum, yum. Try this. Bake plenty of chicken parts (wings, breasts, thighs, drumsticks) in a large aluminum pan. Wash chicken first, pat dry. It's ok if they are all on top of each other. Cover liberally over and under with: Accent, garlic powder, lemon pepper, (you won't need any additional salt), worsteshire sauce, poultry seasoning, a touch of sage, paprika (I love the flavor of Hungarian Paprika best) One stick of butter cut into pats and placed all over the chicken, 1/3 cup of water. Cover with foil and bake for one hour - or until chicken is brown and smelling good from your oven on 350 degrees. While that's baking, boil 2-3 cups of rice; rinse and drain. Put rice on top of the pot you boiled it in (make sure at least 1/2 cup water remains in the bottom of the boiler and turn the heat down on low), Open a can of green beans and put in a sauce pan with come cut up onions. Toss in a salad and some hot buttered rolls. When that chicken is done - place on top of the rice, add some of the liquer from the chicken, spruce it up with some green parsley on top. Add a nice white chardonney, some 'white sheets' or 'ocean' scented candles on the table with your best linen, china you and go for it! (any bought dessert with some ice cream and chocolate sauce to top), some great smoothe jazz music in the background (I recommend anything by Stanley Jordan) - and your dinner will be the best.

Ask him what "grub" he likes the best and then pick suitable vegetables and sides to go with it. I love it when my wife asks me what I would like to eat and then goes to the trouble to fix that specific thing.
