I'm not looking for anything fancy, like with marshmallows or nuts, just a plain, basic mashed sweet potato. Maybe with brown sugar or something. Should I boil, bake or microwave? Do I need to add milk, like with regular mashed potatoes? How many sweet potatoes should I buy to serve 12 people? This seems like it should be so simple, but I'm driving myself crazy!

I can't seem to find any simple recipes at cooking sites.

For 12 people I would use about 6 sweet potatoes. Think as if each person would eat about half of a potato.

I boil mine till tender with the skins on. After they cool for about 15 minutes I peel the skin off. It comes of so easy then.

Then mash like normal potatoes. Add butter, cream/milk to you desired taste. Salt and pepper. that’s it. If you want a hint more of sweetness add some brown sugar and cinnamon to taste. Hope this helps!

Great question. I'd love to have a few extra recipes too. Just plain roasted sweet potatoes each and every Thanksgiving just do not provide enough excitement.

Here's one recipe for 12 persons:
SWEET POTATO PUREE WITH BLUE CHEESE (OR GORGONZOLA) SAUCE

Roast 6 pounds of sweet potatoes at 400 degrees for 1 hour or until done. Peel, mash, and add butter and milk, as you would to ordinary potatoes.

To make a sauce for the potatoes, heat equal parts of blue cheese (or Stilton) and chicken broth until the cheese has melted and both have combined.

A variation of the sauce is to saute a celery stalk and a small chopped onion in 2 Tbsp. butter. When done, put in a blender and puree with 1 cup milk, 1 cup ricotta cheese, and 8 oz. gorgonzola. (Gorgonzola is usually older and sharper than young blue cheese and Stilton, so the ricotta will make its extreme saltiness pleasantly milder.)

Serve the hot mashed sweet potatoes with a well in the middle, as you would serve regular mashed potatoes, and pour the cheese sauce in the well.

use 6-8 sweet potatoes depending on the size
poke the potatoes all over with a fork(leave the skin on) and rub them with a little olive oil and salt and pepper.
roast them in the oven until they're soft. let cool a couple of minutes then cut in half and scoop out the insides.add cream/milk salt pepper some butter and sour cream to tastei ussually add a little cayenne pepper but that's optional.just mash them up and away you go.if you have a food mill that works even better no lumps and a light uniform texture

This is so easy. I guarantee you'll love it & everyone will be like, "Wow, this is so good, what did you do to these potatoes?!"

Peel & cut 6 sweet potatoes into small uniform pieces so they cook evenly. Place them into cold water in a large heavy pot & add 2 tablespoons salt. Cover & let water come to a boil. Then lower heat to med. low & allow to simmer until soft. Usually about 15-20 min.

Drain the water. Add 1/2 stick of butter, 1 cup of whole milk, 1 tsp. black pepper, 1 tsp. cayenne pepper (trust me), 1 tsp. dry mustard, 1 pkg. whipped cream cheese, & 1 tablespoon of brown sugar. Whip w/ your electric mixer, or by hand. Taste for salt & add more if necessary.

The result should be the best of all worlds. Creamy, salty, spicy & sweet @ the same time. Enjoy!

Ingredients: 1 1/2 pounds lean ground beef 1/4 cup finely chopped onion 2 eggs, slightly beaten 3/4 cup soft bread crumbs 1/4 cup ketchup 1/2 teaspoon salt 1/8 teaspoon pepper 2 tablespoons butter 8 ounces sliced mushrooms 6 slices Cheddar, Mozzarella, or American cheese 6 split buns, toasted Preparation: Combine ground beef, onion, eggs, bread crumbs, ketchup, salt, and pepper; shape into into twelve thin (about 1/4-inch thick) patties. In a skillet, melt the butter and sauté the mushrooms until just tender. Place mushrooms on 6 of the patties. Top with remaining patties and seal edges. Broil or grill the burgers to desired doneness. Top each with a slice of cheese and let melt. Serve on split toasted buns. Serves 6. Ingredients: 1/2 cup shredded mild Cheddar cheese or American cheese 1 slice bread, crumbled 2 tablespoons finely chopped parsley 2 tablespoons milk 1 1/2 pounds lean ground beef 1 small onion, grated 2 teaspoons Worcestershire sauce 1 1/2 teaspoons salt Preparation: In a medium bowl, combine cheese, bread crumbs, parsley, and milk; form into 4 balls. Set aside. In the same bowl, combine beef, onion, Worcestershire sauce, and salt; divide into 4 portions. Shape each beef portion around a cheese ball, then flatten lightly with hand to make hamburger patties. Brown on both sides in a large frying pan; cover and cook for about 5 to 10 minutes, until done. Serve on buns with condiments. Serves 4.
