Pork Roast
(using an oven bag makes it even more tender and easier to clean up after)
1 boneless pork shoulder (about 4 pounds), skin on
4 garlic cloves, smashed
1 handful fresh oregano
4 tablespoons Kosher salt (1 tablespoon for every pound of meat)
1 tablespoon coarsely ground black pepper
3 tablespoons vegetable oil
2 tablespoons white wine vinegar
Place the pork, fat-side up, in a roasting pan fitted with a rack insert, and using a sharp knife, score the surface of the meat with small slits. Mash the garlic, oregano, salt, and pepper into a paste on a cutting board with the flat side of a knife; place the adobo in a bowl and stir in the oil and vinegar. Rub the garlic paste all over the pork, being sure to get into the incisions so the salt can penetrate the meat and pull out the moisture - this will help form a crust on the outside when cooked. Cover the pork with plastic wrap and marinate in the refrigerator for at least 3 hours or up to overnight.
Allow the meat to sit at room temperature for 30 minutes before cooking. Preheat the oven to 350F.
Roast the pork for 3 hours, uncovered, until the skin is crispy-brown. Let the meat rest on a cutting board for 10 minutes before slicing.

For excellent results, use a baking bag, the kind you cook a turkey in. Preheat oven to 350F. Put two tablespoons of flour in the bag and shake to coat the inside. Put the roast in a frying pan with 1/4 cup onion and a little oil or butter and sear all sides. I rotate the roast and get a nice sear. Turn off the stove and put the roast directly into the bag. Set it in a deep roasting pan and put aside. Pour 1/cup water into the frying pan and stir until the residual meat juice and onion is well mixed. Pour the mixture over the roast. Put several quarters of red onion around the meat, add about 4-5 cut-up potatoes and carrots. I usually throw in some whole mushrooms and add one can of cream of mushroom soup. At this point, season the roast to your taste, put a pat of butter on all 3 sides of the roast, twist tie the bag closed. Ensure all ends are tucked into the roaster pan and place in oven.Let bake according to weight,(the oven bag will have a chart to determine cooking time.) You might have to thicken the juice around the roast when it comes out but usually the drippings and the soup make a tasty gravy.

Get a McCormick's Bag 'n Season cooking bag for porkchops. It should be in you grocers spice aisle. Follow the directions on the package. You can also throw in a few veggies too. This will guarantee you a moist, DELICIOUS, and tasty pork shoulder every time. You won't be disappointed. Or you can use a Reynold's cooking bag and season it any way you like. Just follow the instructions on the box. Also, clean up is a SNAP when you use cooking bags. They are GREAT and EASY!

what i do is put port shoulder roast in my crock pot and add some water to bottom of pot before you add the meat pour some worcestershire sauce then add your seasons on the meat. i add the onions and celery and carrots with pototoes and let it all cook together set your cooker on high to start with then you can lower the temp setting which the meat is cooking. doing it this way the meat will be tender and you have a full meal all you need to add is salad or veg.

Slow roasting is the best method. The meat becomes so soft and succullent.....it's one of my FAVORITE dishes!
