Any basic bread recipe will work. Use a can that has the approximate volume of a bread loaf and once you form the loaves put it in the greased/floured can fro the final rising. Baking times should be about the same.

Clay pots, like you use for flower pots, work well too. Just remember that they retain a lot of heat. Cooking time will be a little longer to heat the pot but it will continue to cook after removing from the oven.

Please tell me that this is not going to be taught to a class of kids? No wonder my kids are doing the cookiest things in the kitchen!
I'm sorry, I don't know how, but I'd imagine that it's not much different than a smaller version of cooking it in a bread machine. Except that it would not be the kind that would be continously kneaded, like in the machine.
Do everything that would happen IN the machine. Then put a smaller amount in the can... then bake... in the can. Weird, but there you go.
