What are some of your favorite vegetables and some recipes you use to prepare them?

Do you have any suggestions for broccoli and spinach especially?
I also like asparagus, onions, carrots, celery, green beans, bell peppers(aka capsicum) and lettuce.

V8 juice is a good addition to the rest of the fruits and veggies you consume in a day....But try roasting your veggies with a little olive oil, salt and pepper...delicious....Also, stir fry them with oriental seasonings.....broccoli is so good that way...spinach is wonderful...I quickly stir fry it with sliced garlic and olive oil until just wilted....spinach salads are great....or use it in pannini sandwiches....have you ever sauted celery in butter and used as a side dish...yummy.....go online and research vegetarian recipes....happy eating

Here are some things that work for me, though I don't suppose they'd work for everybody.

1. Never have lunch or dinner without a vegetable as part of it.

2. Pick up a Chinese knife at the local Asian market ($10 or less, looks like a little cleaver) and learn how to cut vegetables the Chinese way. Doing this will train you to cut vegetables quickly and in interesting ways, so preparation becomes fun and the food has variety if you cut it different ways. Develop a ritual of cutting vegetables in the morning and putting them in sandwich bags, or prepare several days at a time and store the baggies in the crisper.

3. Try to eat vegetables raw. Cooking makes them flabby, tasteless, and destroys vitamins.

4. If you're a calorie counter, let yourself off the hook on vegetables. Count the calories of everything you eat and drink except fresh vegetables, then use the fresh vegetables to give yourself the full feeling you crave without guilt.

5. Raw vegetables I like include all types of peppers, celery, vine-ripened tomatoes, carrots, small whole cucumbers, English cucumbers sliced on a diagonal, regular cucumbers, raw broccoli, and radishes, sometimes mushrooms and tomatillos, and whatever looks interesting in the produce section.

Nibble on the vegetables any time the mood strikes you. Enjoy!

Try a glass of V-8 juice. Supposedly it will give you most of what you need for a daily requirement.
